Why so sluggish?

I figured it out.  Ever since I made bread, I have been eating bread.  I never eat that much bread. It must be all those extra carbs making me sluggish.  This is a dilemma.

As if that weren't enough, the latest Scientific American has an article about celiac disorder.  It seems they've finally worked out how gluten causes the problems (extreme gastric distress, diarrhea, and more) in individuals with any one of several forms of a particular gene.  In these individuals, the gluten triggers an auto-immune response that seriously damages the cells lining the small intestine (lots of fascinating diagrams and more detail than I care to, or could, repeat). I know someone who developed this sensitivity, and she's not the only one who gets it late in life, like just about my age.  Here I am reading this article and stuffing myself with more gluten than I've had in years, hoping I am not one of them!
